Founded by Chef Michael Kloeti and his wife, Laura, Idletyme Brewing Company recently transitioned from Crop Bistro, but one thing has remained a constant – it has always been the place where locals have gathered for good beer and good food, and the Kloeti’s, in concert with Brewmaster Will Gilson, aim to deliver all that tradition in a contemporary environment that offers the latest in brewing and cooking techniques. Here, you can expect season comfort foods, perfectly paired with Gilson’s ever-popular brews. They’ve even brought beer into the food in collaborations between Chef Michael Kloeti and Gilson that have given rise to award-winning dishes like the vanilla porter sticky-toffee pudding and an onion tart made with Gilson’s Helles Brook Lager. Idletyme is dedicated to elevating flavors in all of their offerings, and will be adding fermentation tanks to increase production, with an eye toward shipping more kegs to local restaurants and selling more retail bottles. Gilson has also begun brewery projects such as aging beers — look for an English-style barley wine aged in rum-soaked oak barrels from Mad River Distillers, and plan to sample an array of ales as you experience the malty marriage of innovation and tradition in pint form.
